It is easy to crimp RJ45 connector to UTP cables using the appropriate clamp. There are several tutorials on the web that show how to do it. It takes only a little bit of precision in arranging the cables and some test to get familiar with the right tecnique.
An RJ45 connector has 8 pins to which you have to connect the 4 pairs in the UTP network cable. To wire an IP camera system you must always use a "direct" sequence, never use crossover wiring. There are two recognized standards: T-568A and T-568B. Choose one or the other is the same, you just have to keep the same standard from both ends of the cable.

The perfect crimping of a coax connector takes some time and a certain amount of experience. You must assemble the connector carefully to avoid accidental contact between the core and the braid, especially if small mini-coax are used. The inner pole should preferably be soldered to guarantee perfect conductivity. For all these reasons the coaxial crimping has always been one of the main problems in the installation of analog CCTV systems. You can power the cameras of your CCTV system by connecting a small adapter near each camera. It's a safe power solution because it provides the camera with perfect 12V power, but it does not allow you to have a backup battery for the system. If you want a system that stays in operation even in the event of a power failure, you need to install a centralized back-up power supply with a battery or a UPS. In this case you will bring power to each camera with 2 DC cables. The further the camera is, the greater the section of the power supply cable must be, since DC creates a considerable voltage drop which is proportional to the cable length and inversely proportional to its section.
Generally speaking, IP cameras do not require a 12VDC power supply because they receive power through the network cable from the POE switch, or from the NVR POE ports. Exceptions are the WiFi cameras that obvoiusly require a local power supply and several PTZ cameras that do not support POE due to the high power consumption

Yes, but the impedance would not be correct and the conductivity lower than the BNCs. This is why it is better to do it only on very short cables.
The ideal cable is a 50 Ohm coaxial, like RG58 or RG174. However, the audio in CCTV is not Hi-Fi and that's why simple cable pairs are used much more frequently. 2x0.5 mm wires, often combined with coax video cables, are good for most applications.

To interpose a cable between the antenna and the device is never advisable. The signal attenuation caused by the cable may reduce the antenna gain. If you have to do this, use low attenuation coaxial cables, special for antennas, and limit the length of the cable to the minimum.

If you use our mini-jacks for a stereo audio connection, you must connect the ground (GND) to the segment close to the plastic cap (sleeve), the left channel to the tip and the right channel to the median segment.
Although a minijack has isolated segments, short circuits can occur during extraction and insertion. For this reason we do not recommend connecting the 12VDC to these connectors. Instead, use the DC plugs to supply power.
